Here is another “buffet” dish recipe that everyone is used to trying only during holidays and parties. But ready-made, and often very tasty, baskets are now sold in any supermarket in five versions. And no one will be able to stop you from putting your favorite salad – for example, this one with chicken, avocado, and cucumber – not on the plates, but in the same baskets. If you haven’t had chicken “since yesterday”, pick up a smoked chicken thigh or breast in the section next to the baskets, you won’t regret it.
- 8 medium shortbread dough baskets, 7–9 cm in diameter
- 200 g baked, fried, or boiled chicken meat
- 1 medium ripe avocado (200 g)
- 1 medium cucumber (180 g)
- Green onions (30g) – 1 small bunch
- half a small lemon (40 g)
- 30 g mayonnaise
- freshly ground black pepper
- greens or seeds for decoration, optional
STEP-BY-STEP COOKING RECIPE
Finely chop the green onion with the help of a knife block set, and mix it with mayonnaise and a little black pepper. Cut the chicken into small cubes and add them to the green onions along with the mayonnaise.
Remove the lemon zest with a fine grater. Squeeze the juice from the lemon. Juice and zest should be combined in a bowl.
Remove the pit from the avocado by cutting it in half lengthwise. Remove the pulp from the skin with a sharp spoon. Cut the pulp into 1.5cm cubes and immediately mix with the lemon juice and zest.
Toss the chicken with the green onions and mayonnaise along with the cucumber and avocado. Carefully arrange the salad in baskets and garnish it with herbs or seeds if desired. Black paper. Serve immediately.
